This delicious treat can be served on toasted wheat bread or bread of your choice.
- Toast 2 Slices bread or bun
- Cut Eggplant cross-ways
- Place Eggplant in a large bowl of water
- Remove from the water and cover with dry batter
- Place Eggplant on a cookie sheet that has a thin coating of oil
- Bake in the oven at about 350 degrees
- Brown on both sides until crispy
- Serve with lettuce, pickle, onion, tomatoes, sprouts and Vegan cheese….
